Szechwan Shrimp with Sugar Snap Peas

Grilling isn’t the only summer cooking option. You can also get out of the kitchen quickly with a quick, delicious stir fry. This recipe was created by Gary this week and it was a big hit as a healthy summer meal. Best served with brown rice.

Cooking tip: Add ingredients to the wok slowly because you don’t want to bring down the temperature of the other ingredients as you add new ones.

Szechwan Shrimp with Sugar Snap Peas

1 pound large shrimp, shelled and deveined
1 tablespoon cornstarch
4 tablespoons peanut oil

4 tablespoons rice cooking wine
4 tablespoons soy sauce
1 tablespoon sugar
1/4 cup ketchup
1 tablespoon sesame oil
1 teaspoon Gary’s rub or favorite grill rub
1 teaspoon Siracha Hot Chili Sauce

2 pasilla peppers, roasted, skin removed and chopped
1/2 Jalapeño pepper, finely minced
2 cups sugar snap peas, washed and strings removed
2 tablespoons crushed garlic
1 tablespoon minced fresh ginger
2 teaspooons red pepper flakes

Mix the shrimp with the cornstarch and the peanut oil and let stand.
Whisk together the wine, soy sauce, sugar, ketchup, sesame oil, Gary’s rub and chili sauce. Set aside.

Heat a large wok over high heat. Add the remaining peanut oil. Add the peppers and fry for 2-3 minutes. Add sugar snap peas and cook for 3-4 minutes. Add garlic ginger and red pepper flakes. Cook for one minute. Add shrimp and fry for about 2 minutes, just until shrimp turn pink. Add the reserved sauce and bring to a boil and coat the shrimp. Remove from heat place on platter to ensure that cooking has stopped. Serve with brown rice or white rice.

Plum Streusel Cake

My mother, Irma, was a great cook. She never used recipes and it was always a challenge to document what was going on in her kitchen. I had pencil, paper and measuring cups handy and would measure or weigh ingredients after she pulled everything together. This was one of her most popular cakes, like a coffee cake that works for morning coffee, but also like a crumble to serve with afternoon coffee and great with a scoop of ice cream for an after-dinner dessert.

PLUM STREUSEL CAKE

¼ cup unsalted butter, softened
¾ cup sugar
2 eggs
½ vanilla bean
1¾ cup flour
2 teaspoons baking powder
¼ teaspoon salt
¾ cup plain yogurt
6 Large purple plums
Juice of ½ lemon

Streusel Topping

¾ cup flour
¼ cup sugar
6 tablespoons butter, softened

Purchased ice cream or whipped cream for serving

Instructions:
1. Prepare Cake Pan
Butter and flour a 13 x 9 x 2 inch glass-baking dish.

2. Prepare Cake Batter
Cover vanilla bean with hot water for a few minutes to plump.
Beat butter until creamed, gradually add sugar. Add eggs one at a time and beat until light and fluffy. Cut vanilla bean lengthwise and scrape inside of bean. Add vanilla bean scrapings to batter.
In a small bowl, mix flour, baking powder, and salt.
Alternately, add flour mixture and yogurt to creamed butter. Stir in lemon juice. Spread batter in prepared pan.

3. Prepare fruit and arrange on top of cake batter
Wash and pit plums. Cut in half and then into 4 quarters.
Arrange fruit on top of batter in neat rows.

4. Prepare and Add Streusel Topping
With fork or pastry cutter, combine flour, sugar and butter until crumbly.

5. Bake Streusel Cake
Bake in preheated 350o oven for 40-45 minutes until streusel topping is nicely browned and apples (or plums) are tender.

Chicken Under a Brick from the Tuscan Farmhouse Dinner chapter.

This is one of our favorite recipes from our book Cook the Part: Delicious, Interactive and fun Team Cooking and is the main dish in the Tuscan Farmhouse Dinner. It’s perfect for a holiday BBQ. Not too time consuming so you can still enjoy the company of your guests.
Enjoy.

CHICKEN UNDER A BRICK
8 large chicken breast halves, boneless with skin on
12 garlic cloves, crushed
2 teaspoons dried oregano
1 teaspoon crushed red pepper
2 tablespoons fresh rosemary
2 tablespoons fresh thyme
1 ½ cups olive oil
2 teaspoons kosher salt
3 tablespoons grill rub
Canola oil spray for grilling
8 bricks wrapped in foil
Rosemary sprigs or basil leaves for garnish

Prepare chicken.
Wash and dry chicken. Place breasts, one at a time, into a large sealable plastic bag and, using covered bricks, pound to ½” thickness. Remove from bag and repeat.
Make marinade.
Place garlic, oregano, red pepper, rosemary and thyme in a
Marinate chicken.
Divide the marinade and prepared chicken equally between 2 large sealable plastic bags and turn until chicken is coated.
Refrigerate in marinade until ready to grill.
Preheat grill.
Spray grill rack with canola oil.
Grill and serve.
Remove chicken from marinade. Sprinkle with salt and rub.
Place chicken skin-side down on grill. Top each breast with a covered brick and grill until skin is brown and crispy, approximately 5 minutes. Turn chicken and grill until done, another 2 minutes or so.
Remove to platter and cover with foil until ready to serve.
Serves 8.
