The Paper Boy Delivers: Parchment Paper Wrapped Salmon

Sam Wood was the main chef for our Park City dinner last night. It’s perfectly ok to turn the kitchen reigns over to your house guests and it can be great fun. Everyone pitched in with appetizers and salads as Sam took center stage with his delicious, moist salmon. He shares his recipe and demonstrates his technique in the pictures above for a wonderful dinner of Parchment Paper Wrapped Salmon. Always start with fresh, delicious salmon. This recipe ensures a moist, flavorful meal.
Parchment Paper Wrapped Salmon

Zest of 2 lemons
2 lemons, thinly sliced
1 large yellow onion, thinly sliced
salt
pepper
olive oil
3 lbs. Wild King Salmon (8 ounces per person)
parchment paper
tin foil

Cut 12” piece of parchment paper for each salmon filet.
Put about a tablespoon of oil on the paper, place a few slices of the onion and lemon on the oil, layer filet over all. Salt and pepper filet and drizzle with a small amount of olive oil. Spread a teaspoon of lemon zest over filet. Add more onion and lemon. Fold over the parchment paper making a pocket around the salmon. Then encase the entire package in foil. Repeat for each filet.

Bake in 400 degree oven for 15 minutes. Open one packet to ensure salmon is done to your liking. Bake up to 5 minutes more if required.
Unwrap and serve.

Last night we attended a 100th birthday party for Julia Child. It was our second visit to Hexagone in San Diego, a wonderful French restaurant that has been flying under the radar. The menu developed for a full house last night was wonderful and the Chef shared the salad dressing recipe for his Tarragon Vinaigrette, a favorite for all. Of course I had to convert this to regular home usage quantities as the recipe he shared was for 8 cups of olive oil.

Bibb Lettuce with Goat Cheese Gratinee and Tarragon Vinaigrette


Tarragon Vinaigrette
4 tablespoons rice vinegar
1 tablespoon white vinegar
2 tablespoons Dijon mustard
1 1/8 teaspoons finely chopped tarragon
1 cup olive oil

This was delicious served over Bibb lettuce.

The entrées also received rave reviews. The sea bass had just a light flavor of pickled ginger. You almost had to know it was there to detect it. It was devine.

There were many participants at the dinner with our AIWF (American Institute of Wine and Food) group who knew Julia personally and told some great stories about her. Apparently when she was last in San Diego in 2000, she addressed a group of up and coming chefs at the Marine Room and her bit of advice to them was
“Don’t get too fancy…food is food.” Another birthday party guest shared her account of the three worst meals she ever had:

My favorite Julia quote of all time is, “I love to cook with wine. And sometimes I even put some in the food.”

Chicken Salad

What are your favorite picnic foods? I seem to end up favoring chicken salad as one of the items on our picnic list. Our latest picnic also included a fabulous corn and tomato salad with basil vinaigrette.

We also enjoy grapes and other fresh fruit, cut up for easy serving, a selection of cheeses and crackers and a baguette. Perfect desserts for picnics include brownies, cookies, or lemon bars.

The latest chicken salad was a big hit and is captured in the recipe below:
Chicken Salad with Toasted Pecans and Grapes
4 organic skinless, boneless chicken breasts, grilled
1 cup toasted, chopped pecans
2 celery ribs, chopped
1 roasted red bell pepper, skinned and chopped
2 cups seedless grapes, halved
1/2 cup red onion, finely chopped
2 tablespoons tarragon, finely chopped
Juice of one lemon
1/2 cup mayonnaise
1 tablespoon plus 1 teaspoon Dijon mustard
1 teaspoon salt
Freshly ground pepper

Toss together all ingredients and chill. Serve with fresh baguette.


Grilled Corn and Tomato Salad

5 ears corn, grilled and husked (we soak the corn in water and grill in the husk, then husk and put back on the grill for a bit of browning)
1 1/2 cups red, orange and yellow heirloom cherry tomatoes
1/2 finely chopped jalapeña

Vinaigrette:
1/2 cup packed basil leaves
1 tablespoon champagne vinegar
2 teaspoons country Dijon mustard
2 teaspoons white truffle honey
3 tablespoons olive oil

Prepare the vinaigrette in food processor, processing all ingredients except olive oil until the basil is finely chopped. Slowly add the olive oil through the feed tube.

Mix all ingredients together and toss with vinaigrette. Chill until ready to eat.
