This recipe is being shared by my good friend, Barbara Zaugg. Her mother made these for many years while living near Mexico City.  We made these a few weeks ago, but they are great for that last minute baking because they are quick and easy.

Date Nut Bars

2 cups sugar

2 cups flour

2 teaspoons baking powder

2 ½ cups dates

2 cups chopped nuts

4 eggs

2 tablespoons butter, melted

1 teaspoon vanilla

Beat the eggs until frothy, add butter and vanilla. 

Mix dry ingredients.  Slowly add to the egg mixture.

Spread into a prepared 15 x 10 x 1 inch baking pan.

Bake at 350° for 20 to 25 minutes.

Cut into 1 inch by 3 inch bars and roll in powder sugar.
