The Taste of Baja chapter of Cook the Part was recently “beta tested” by hosts Hillary and Carin Canale-Theakston.  Four couples were invited to Cook the Part, including our very own San Diego County Sheriff, Bill Gore and his wife Natalie.  We had a very special participant for this event – Piper, who gave her thumbs up for the citrus guacamole. (Recipe provided below).  The menu for this chapter also includes Tomatillo Salsa and Pico de Gallo served with Yellow and Blue Corn Chips.  The Baja Salad includes toasted pepitas.  The main course features fish tacos with shredded red cabbage and white sauce, corn tortillas, Mexican Rice and Black Beans with Queso Anejo.  The dessert is a very unusual brownie – Chocolate Chipotle Brownie with vanilla ice cream, served with an espresso shot over the top.

Citrus Guacamole

6 large, ripe avocados
1/2 small red onion, minced
3 cloves garlic, crushed
1 jalapeno, minced
Juice of 1 orange
Juice of 1/2 lime
3 tablespoons chopped cilantro
1 teaspoon salt

Peel, pit and mash avocados with fork.
Mix all ingredients together and serve with
Blue and yellow corn chips.
