This pancake recipe was developed by my brother, Siggy, during his tour of duty as a cook in the Navy in the 1960’s. They are still the best I have ever had and the recipe has been passed around to friends and relatives for decades. I made these for Kristina this week on the first day on her new job. I had buttermilk in the house so used that instead of regular milk. Fabulous!

Uncle Siggy’s Pancakes

2 cups sifted all purpose flour
½ cup sugar
4 ½ teaspoons baking powder
1 teaspoon salt
2 eggs
2 cups milk
¼ cup (1/2 stick) butter

Sift dry ingredients into large bowl. Melt butter in microwave in medium bowl. Beat eggs into butter
and add milk. Gradually stir liquid into dry ingredients until blended. A few small lumps are ok.

Using a large spoon (like an ice cream spoon), place spoonfuls on griddle heated to 350°. When bubbles
form on top, turn pancake and continue cooking until browned.

Serve with syrup, butter or berries as desired.

If making for a smaller group, you can refrigerate leftover batter for fresh pancakes later!
