Homemade Pesto sounds like a lot of work, but is really quite simple; fifteen minutes from start to finish.
Pesto
4 1/2 cups loosely packed fresh basil
3 large cloves garlic, crushed
1/4 cup pine nuts
1/2 cup freshly grated Parmesan cheese
1 teaspoon salt
1/2 teaspoon black pepper
3/4 cup extra-virgin olive oil
Add the basil to bowl of food processor along with the next five ingredients. Process until finely chopped. With motor running, add the olive oil through the feed tube until well incorporated.
Serve over grilled or sautéed organic chicken breasts with a side of spaghetti tossed with a bit of garlic-infused olive oil, parsley and red pepper flakes. A nice green vegetable such as roasted asparagus completes the meal. The entire dinner can be ready in less than 30 minutes if your partner helps with the cooking!
